Ingredients

12 oz (340 g) pasta (penne, fettuccine, or your favorite)

5 oz (150 g) Boursin cheese (Garlic & Fine Herbs recommended)

2 tbsp olive oil

3 cloves garlic, minced

1 small shallot, finely chopped (optional)

1 cup heavy cream (or half-and-half for lighter version)

½ cup pasta water (reserved)

1 cup baby spinach or arugula (optional)

Salt and pepper, to taste

Freshly grated Parmesan (for garnish)

Red pepper flakes (optional, for a little heat)
Instructions

Cook the Pasta:
Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Reserve ½ cup of the pasta water before draining. -
Sauté Aromatics:
In a large skillet, heat olive oil over medium heat. Add shallots (if using) and cook for 1–2 minutes. Stir in the garlic and sauté for another minute until fragrant. -
Make the Sauce:
Lower the heat and stir in the Boursin cheese and heavy cream. Stir continuously until the cheese melts into a creamy sauce. -
Combine:
Add the cooked pasta directly into the sauce. Toss to coat. Add a splash of the reserved pasta water to loosen the sauce as needed. -
Add Greens (Optional):
Stir in spinach or arugula until just wilted. Season with salt, pepper, and red pepper flakes to taste. -
Serve:
Plate the pasta and top with grated Parmesan and a drizzle of olive oil if desired.
