Ingredients

1 lb ground beef (80/20)

1/2 cup gluten-free breadcrumbs (or almond flour)

1/4 cup milk (dairy or non-dairy)

1 egg, lightly beaten

1 small onion, finely chopped

2 cloves garlic, minced

1 tbsp Worcestershire sauce (ensure gluten-free)

1 tbsp ketchup

1 tsp salt

1/2 tsp black pepper

1/2 tsp smoked paprika
For the glaze:

1/4 cup ketchup

1 tbsp brown sugar

1 tsp Dijon mustard

Preheat oven to 375°F (190°C). Line a loaf pan with parchment paper or lightly grease it.

Prepare the meatloaf mixture: In a large bowl, combine the ground beef, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, ketchup, salt, pepper, and smoked paprika. Mix until just combined — avoid overmixing.

Shape and place: Transfer the meat mixture into the prepared loaf pan. Press gently to shape it evenly.

Make the glaze: In a small bowl, mix the ketchup, brown sugar, and Dijon mustard. Spread the glaze over the top of the meatloaf.
