Ingredients
For the Carrot Cake:

3 large carrots, peeled and chopped

1 cup vegetable oil

For the Chocolate Glaze:

Instructions
Step 1: Preheat and Prep
Preheat your oven to 350°F (175°C). Grease a 9-inch round or bundt cake pan and dust lightly with flour.
Step 2: Blend the Wet Ingredients
In a blender, combine the carrots, eggs, and oil. Blend until smooth.
Step 3: Mix the Dry Ingredients
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
Step 4: Combine Wet and Dry
Pour the carrot mixture into the dry ingredients and mix gently until just combined. Do not overmix.
Step 5: Bake the Cake
Pour the batter into the prepared pan and bake for 40–45 minutes or until a toothpick inserted in the center comes out clean.
Step 6: Prepare the Glaze
While the cake is baking, combine all glaze ingredients in a saucepan over medium heat. Stir until everything is melted and smooth.
Step 7: Final Touch
Once the cake has cooled slightly, remove it from the pan and pour the warm chocolate glaze over the top. Let it set before serving.
