Ingredients
-
4 boneless, skinless chicken breasts
-
1 tsp salt
-
½ tsp black pepper
-
1 tsp paprika
-
1 tbsp olive oil
-
2 cloves garlic, minced
-
½ cup sun-dried tomatoes, chopped
-
1 cup chicken broth
-
1 cup heavy cream
-
½ cup grated Parmesan cheese
-
1 tsp red pepper flakes (optional)
-
1 tsp dried thyme
-
-
Fresh basil, chopped (for garnish)
-
Instructions
-
Season the chicken: Pat chicken dry. Season both sides with salt, pepper, and paprika.
-
Sear: Heat olive oil in a skillet over medium-high heat. Sear chicken 4–5 minutes per side until golden. Remove and set aside.
-
Make the sauce: In the same pan, sauté garlic for 1 min. Add sun-dried tomatoes and cook for another minute.
-
Deglaze: Pour in chicken broth and scrape up any bits from the bottom. Simmer for 2 minutes.
-
Creamy base: Add heavy cream, Parmesan, red pepper flakes, and thyme. Stir and simmer for 3–4 minutes until slightly thickened.
-
Return chicken: Place chicken back in the skillet. Simmer for 7–10 minutes or until internal temperature hits 165°F (75°C).
-
Serve: Garnish with chopped basil. Serve over mashed potatoes, pasta, or rice.
Notes
-
You can use chicken thighs instead of breasts for a juicier option.
-
Add spinach or mushrooms for an extra veggie boost.
-
Store leftovers in the fridge for up to 3 days; sauce thickens beautifully overnight.
