Ingredients

1 lb ground beef

4 cups potatoes, peeled and diced

1 cup whole milk

1 cup heavy cream

1 cup shredded cheddar cheese

1 teaspoon dried thyme

½ teaspoon smoked paprika

Salt and pepper to taste

Instructions

In a large pot, heat olive oil over medium heat. Add diced onion and garlic, and sauté until fragrant (about 3 minutes).

Add ground beef and cook until browned. Drain excess fat if needed.

Stir in diced potatoes, beef broth, thyme, paprika, salt, and pepper. Bring to a boil.

Reduce heat to low, cover, and simmer for 20–25 minutes until potatoes are fork-tender.

Stir in milk, cream, and shredded cheddar cheese. Simmer for another 5–7 minutes until the soup thickens slightly.
