Ingredients
For the Beef and Gravy:

1.5 lbs beef stew meat (or chuck roast, cut into chunks)

3 cups beef broth

Instructions

Brown the Beef:
In a large Dutch oven or heavy-bottomed pot, heat olive oil over medium-high heat. Season beef with salt and pepper. Sear the beef in batches until browned on all sides. Remove and set aside. -
Sauté the Aromatics:
In the same pot, add diced onion and cook for 3–4 minutes until soft. Add minced garlic and sauté for 1 minute more. -
Simmer:
Return the beef to the pot. Pour in beef broth, Worcestershire sauce, soy sauce, thyme, and paprika. Bring to a simmer, then reduce heat to low, cover, and cook for 45 minutes or until the beef is tender. -
Thicken the Sauce:
Mix cornstarch and water in a small bowl. Stir into the pot and let simmer for another 5–10 minutes until the gravy thickens. -
Cook the Noodles:
While the beef finishes cooking, boil the egg noodles according to package instructions. Drain and toss with butter if desired.
