Description
This ultra-simple 4 ingredient potato soup is creamy, cozy, and perfect for busy days when you need comfort fast. With just potatoes, broth, butter, and milk, you’ll have a homemade classic on the table in no time. Simple ingredients, big flavor!
Ingredients
-
6 large russet potatoes, peeled and diced
-
4 cups chicken or vegetable broth
-
2 tablespoons butter
-
2 cups whole milk (or your favorite milk alternative)
Instructions
-
Prepare the potatoes: Peel and dice the potatoes into small chunks.
-
Cook the potatoes: In a large pot, bring the broth to a boil. Add the potatoes and cook until fork-tender, about 15-20 minutes.
-
Mash lightly: Once the potatoes are tender, use a potato masher to mash some of them directly in the pot, leaving a few chunks for texture.
-
Add butter and milk: Stir in the butter until melted, then slowly pour in the milk. Heat gently over low heat until warmed through (do not boil).
-
Season: Taste and season with salt and pepper if desired.
-
Serve: Ladle into bowls and enjoy warm! Top with optional garnishes like shredded cheese, green onions, or crispy bacon if you like.
Notes
-
For a richer soup, replace part of the milk with heavy cream.
-
You can blend the soup completely smooth with an immersion blender if you prefer a creamier texture.
-
Add seasoning like garlic powder, onion powder, or a pinch of paprika for more flavor.
-
Leftovers can be refrigerated for up to 4 days.
